Xocolla Chocolatier Artisian
The Mascalzone Wine Tasting and Chocolate pairing evening features chocolates from Xocolla Chocolate Makers from Sugar Land, in the greater Houston Metropolitan area.
The name Xocolla (pronounced: ZO-CO–LA), is derived from the Mayan name for Chocolate – xocolatl. The Mayan civilisation along with the Aztecs are credited with being the first peoples to discover the cacao bean and cultivate it to make beverages over 4,000 years ago.
The Xocolla chocolatiers hand produce small batches of chocolate bars direct from only the choicest ingredients, priding themselves on working only with a select group of reputable cocoa bean farmers.
Together with this, they work along side chefs and sommeliers in order to pair the specific chocolate blends with complimenting wines, beer, liquors, coffees, teas, cheeses, fruits and other foods.
Xocolla was founded by Tony Najjar after a business trip to California in 2006 where he was introduced to a small group of chocolatiers in the Bay Area.
Fascinated by the process of chocolate making, in particular the simplicity of combining only two ingredients to conjure such rich flavours. Initially for Najjar, chocolate making was a hobby before evolving into a part time business three years later and finally a fully fledged enterprise by 2015.
Today, Najjar’s mission is to share his passion for chocolate and increase awareness of chocolate production among food enthusiasts.
Xocolla’s process for chocolate production includes creating a unique roasting profile for each type of bean that they source. In so doing they are able to get the best flavour out of the beans.
Founded in 2012 by old friends Fouad Alameddin and Chris Goodrich, the pair began importing and selling their favourite wines to share with wine enthusiasts in the Houston region.
Alameddin and Goodrich have a portfolio of wines that is always evolving and expanding thanks to regular visits to Italy and California with friends and family. Primarily visiting small, boutique vineyards, the Alarich Winery is committed to bringing a selection of premier wines back with them to Texas.
Among their selection are wines from Piemonte, such as Barolo and Barbera d’Alba, as well as from the Bellaria Winery, Campania, such as the Greco di Tufo and the Fiana di Avellino and from the Veneto with the Valpolicella.
At Alarich Wines the passion for wine is evident. The emphasis is on the needs of their customers and the desire to bring wines that others will enjoy as much as they themselves do.
Bring your best friends to Mascalzone, Houston, to enjoy exquisite wine and chocolate pairings, led by Winemaker and Sommelier, Ryan Levy
